HOW WE WORK

Design Around Service, Flow and Demand

Design

01 · Understand Demand

Define capacity, flow and peak demand.

We study covers, queueing, dwell time, turnover and trading patterns to understand demands throughout service. These requirements establish the operational brief, capacity and customer journey that guide the design.

  • Queue & dwell analysis
  • Trading brief

What Venue Operators Usually Ask Before We Start

Do you design and build?

Yes. Greater Group can manage the full project across strategy, concept design, documentation, FF&E, procurement, joinery manufacture, fitout and delivery, or work across individual stages depending on your requirements.

Our hospitality experience spans restaurants, bars, cafés, QSR, stadiums, major venues and travel environments, with the scope tailored to each project.

How do you design for peak demand?

We start by understanding capacity, covers, customer flow, queueing, service points, dwell time and turnover. This establishes how the venue needs to perform during its busiest trading periods.

Front of house, back of house and circulation are then planned around these requirements, creating an environment that supports efficient service when demand is at its highest.

Can you deliver around our trading or event calendar?

Yes. We programme design, procurement, manufacture and installation around trading periods, events, seasons and available closure windows.

Where possible, joinery and other components are manufactured off site in advance, reducing time on site and allowing installation to be coordinated around the windows available.

Do you plan kitchens and back of house?

Yes. Kitchens, bars, serveries, storage and service routes are planned alongside the customer areas rather than after them, so staff movement and guest movement resolve as one system.

We coordinate with kitchen consultants, equipment suppliers and your operations team, and the layout is tested against the covers and service model the venue is being built for.

Can you work with an existing venue?

Yes. We regularly work within existing environments, including refurbishments, upgrades and retained fitouts.

We assess the existing space early to identify what can be retained, adapted or replaced, then develop the design and delivery programme around the existing conditions and operational requirements.

Can you manufacture bars, serveries and bespoke joinery?

Yes. We manage bespoke bars, serveries, counters and hospitality joinery through our manufacturing and procurement capability, including production through The Lab in Melbourne and our wider supplier network.

Off-site manufacture also allows key elements to be coordinated and quality checked ahead of installation, supporting faster delivery on site.

Can you work across multiple venues and markets?

Yes. Greater Group supports individual venues, multi-site hospitality programmes and projects across Australia, New Zealand, Asia and global markets.

Our teams can establish shared design and delivery principles across a portfolio, with each venue developed around its specific format, location, customer demand and operational requirements.

What do you need from us to get started?

A site, target opening date, indicative budget and an understanding of the intended venue and service model are enough to start the conversation. Floor plans, existing conditions, operational requirements and event or trading calendars are also useful where available.

We can then define the appropriate scope, programme and next steps for your project.
