Bringing the Neighbourhood Pasticceria Into the Terminal
Familiar Hospitality at Airport Pace
Maggio’s Pasticceria needed to translate the familiarity and warmth of an Italian café into Sydney Airport’s Qantas Terminal 3. The challenge was to retain the character of the brand while adapting the experience to an environment where customers may be stopping for a meal, grabbing a coffee or moving quickly towards their gate.
Rather than turning Maggio’s into a conventional airport grab-and-go offer, the brief retained the sense of dwell and hospitality that defines the brand. The venue needed to accommodate the speed of a terminal transaction while still giving passengers a reason to sit, pause and experience the more relaxed character of a neighbourhood pasticceria.
Translate the Café, Not Just the Branding
TableFive developed the hospitality environment around a hero counter clad in curved travertine mosaic, backed by grooved timber panels in Maggio’s deep blue. Warm oak-toned finishes, rounded joinery and soft lighting bring warmth to the tenancy, while brass-toned detailing, illuminated signage and reeded glass give the café greater presence from the concourse.
Italian heritage is carried through specific details rather than overt theming, including entry mosaics and a heritage gallery wall. TableFive resolved the concept and documentation around the customer and food and beverage experience, with Greater Group’s wider capability carrying the project through manufacture and construction as part of the coordinated Terminal 3 programme.
A Pasticceria Reframed for Travel
The completed Maggio’s balances two different airport behaviours within one venue. It can support customers moving quickly through the terminal while still offering the warmth, materiality and seating experience of a more traditional café.
Together with Lotus and Slims, it demonstrates the broader strength of the TableFive and Greater Group model. Specialist hospitality design sits within the same group as documentation, manufacture and build, allowing three very different brands to be adapted for airport hospitality and delivered together without imposing the same design language across them.
